The BEST protein pancake recipe

Pancake Day is upon us, and it can be difficult to resist the fluffy goodness when it seems like every man and his dog is flipping pancakes.

However, there are options for enjoying pancake day without being too unhealthy. Try Fuel’s secret protein pancake recipe and healthy topping options…

The ultimate protein pancake recipe:

1 scoop of vanilla protein powder (we like the Bulk protein)

1 tablespoon of porridge oats

1 teaspoon of baking powder

1/2 banana

1-2 eggs

Dash of milk (of your choice)

Blend all of the ingredients together until smooth and pour onto a hot, oiled pan. Cook for about 3 minutes over a medium heat until small bubbles appear on the surface of each pancake, then turn and cook another 2-3 minutes until golden. Click here to watch our video tutorial on social media.

Healthy Pancake Toppings:

The classic: Lemon and sugar

This one might be basic, and you may read the word sugar and think ‘that’s not healthy!’, but, as far as toppings go, a sprinkle of sugar isn’t going to kill anyone and it is certainly better than a scoop of ice cream and a dollop of Nutella!

Greek Yoghurt and Fruit

We all know that Greek Yoghurt is relatively low in calories and high in protein and fruit will add a nice sweetness as well as being one of your 5-a-day!

Dark Chocolate and Bananas or Strawberries

Dark chocolate has so many health benefits and coats your pancakes in the perfect layer of sweetness. Simply pick up good quality dark chocolate, melt in the microwave, and then drizzle all over your pancakes with some banana or strawberries! 

Cocoa Nibs and Greek Yoghurt

Craving chocolate without the sugary calories? Cacao Nibs are your best friend! When paired with Greek Yogurt, you still get your creamy, chocolatey fix while staying healthy.

In addition, Greek yogurt has a lot of health benefits too. It’s a great source of protein, probiotics, potassium, and calcium.

Yoghurt covered Frozen Fruit

Another great option is to cover fruit in yogurt and then freeze them. These delicious frozen yogurt covered blueberries are great for snacking but would also make a wonderful pancake topping too!

This idea is so simple all you’ll need is fresh blueberries, Greek yogurt, parchment paper, and a baking sheet. Prepare them the night before you want to indulge in delicious pancakes so that the berries and yogurt have time to harden.
